Our friend Kyle's mom used to run a Filipino restaurant, and Kyle grew up cooking in it. One of their specialties was a caramelicious banana lumpia....which I convinced him to make for me.
Kyle is always welcome to come make Lumpia for me.
I'll try to get details out of Kyle... but basically it a banana, cut in half, then halved lengthwise, filled with brown sugar, and rolled up in a lumpia wrapper. He then fried them, and topped them with a dry caramel (just sugar heated until it caramelizes).

ReplyDeleteI suggest using slightly green plantain if you like a bit firmer banana bite.
